Pichona is a Vermont-based pop-up bakery baking up familiar favorites with a little something extra. Sofia makes pastries that celebrate local fruit, produce, and grains, while taking the classics you already love and giving them their moment.
From flaky layers to buttery crumbs, everything is made with good ingredients, a little creativity, and a whole lot of care.

The First Batch Story.

A home-grown Baker with roots in the Hudson Valley and a love for good food, good ingredients, and a little adventure, Sofia formed Pichona, a unique pop-up bakery.
Before calling Vermont home, Sofia lived in Washington, DC, where she once imagined a very different career: human rights law and a job at the United Nations. In 2022, she traded DC for Vermont and eventually found herself following a different kind of calling. One involving butter, flour, seasonal produce, and a very full oven.
Pichona grew from that shift: a bakery built around creativity, community, and the simple joy of making something delicious from scratch.

At Pichona, we believe good bakes can do more than make a great bite. We're all about celebrating the little and big moments, along with the people who grow our food to showcase what makes Vermont special, and ultimately bringing people together around the table.
By working with seasonal and locally sourced ingredients, Sofia creates pastries that reflect where we are and what's growing around us. The menu changes with the seasons, keeping the baking exciting and giving local ingredients their moment to shine.
The math is simple: bake the classics + celebrate the seasons = deliciously unique pastry moments.




What is "Pichona"?
Pichona is a little piece of home. My family has always called me "Pichona", a Spanish term of endearment meaning “darling.” It’s a nickname that has followed me through life, so a very fitting name for a bakery born from a lot of love, encouragement, and butter.
